This recipe brings me back to Spain, it's a recipe that my grandmother and my dad make quite often and it's the perfect quick and "healthy" meal. I'm saying "healthy" because this meal can incorporate many different ingredients, so feel free to have some fun.
Ingredients
3 cups Cooked ChickPeas (or a can of precooked chickpeas)
1/2 Onion (diced)
1/2 Green Pepper (diced)
1/2 Red Pepper (diced)
1 Carrot (or 2 if small)
1/3 cup Uncured Chorizo (diced)
Directions
Cut all veggies, chorizo and dry chickpeas with a paper towel.
Season veggies and chickpeas with salt and pepper.
Heat up a large and a medium size pan over medium heat.
On large pan add a some olive oil and add chickpeas until crispy and golden.
At the same time, on medium pan add chorizo.
When juices are released, throw in the rest of the veggies and cook until really golden.
Add veggies into chickpeas pan and mix well
Plate and enjoy
