Short Rib Grilled Cheese Sandwich
Last week we covered how to make delicious Slow Cooked Short Ribs. Today I'm showing you how to turn those incredible short ribs into an even more incredible sandwich. This recipe is inspired by Not Another Cooking Show and it's probably the best sandwich I've ever tried.
1 piece of Slow Cooked Short Ribs (shredded with its sauce)
~1 cup Aged Gouda (or Gruyere)
2 tablespoons Blackberry Jam
5-10 Pickled Onions
2 pieces Sourdough Bread (or Ciabatta)
Butter (or Mayo)
Take one of the pieces of bread and spread a thin layer of the blackberry jam on it.
Add half of the cheese in top of the jam. (should have a decently thick layer of cheese)
Heat up short ribs in a pan with some water to gain some moisture if needed and add them in top of the cheese.
Add pickled onions in top of the short ribs.
Add the remaining of the cheese on top (should again have a decently thick layer of cheese)
Spread thin layer of butter or mayo in one side of the bread and throw in a pan (with no oil) over medium heat.
When the bread starts to toast, turn the sandwich around and spread some of the cheese on top of the cooked bread. (watch out with the flipping)
Repeat step 7 and let cheese and bread to finish cooking,
Repeat step 8 and serve.
