Ramen

There's not many better recipes for a night at home or a cold day than a good home made ramen. It's a super dynamic recipe that you can experiment with and add your own touch and it will still be delicious. With its delicate broth with scents of garlic, ginger, soy sauce and sesame oil, the flavour and texture of the onions and baby bok choi and the richness of the noodles and crispy pork belly (or your choice of protein), this might just be the perfect dish.




Ingredients


Broth

  • 1 tablespoon oil

  • 1 onion (sliced)

  • 2 green onions (sliced)

  • 1-2 baby bok choy (sliced into quarters lengthwise)

  • 4 ounces shiitake mushrooms (stems removed and sliced in semi-large pieces)

  • 1 tablespoon fresh grated ginger root

  • 4 garlic cloves (minced)

  • 4 cups low sodium chicken broth (available in every grocery store or make at home)

  • 1 cup water

  • 2 tablespoons oyster sauce

  • 2 tablespoons of black garlic sauce

  • 1 tablespoon chili garlic sauce

  • 1 tablespoon fish sauce

  • 1/2 cup low sodium soy sauce

  • 1/4 cup rice vinegar


Eggs

  • 4 eggs


Ramen Noodles

  • 3 packages fresh yakisoba noodles


Protein


Plating

  • 1 teaspoon soy sauce

  • 1 teaspoon black garlic sauce

  • 2 teaspoons sesame oil

  • Sesame seeds (to taste)


 

Directions


Broth

  1. Heat a large pot over medium heat

  2. Add the onion, white part of the greed onion and baby bok choi and cook for 5 minutes (or until they start to soften)

  3. Add shiitake mushrooms and cook for 3-4 minutes

  4. Add the garlic and ginger and stir fry for about 30 seconds (until you start smelling it's fragance, otherwise they will burn)

  5. Add the chicken broth, water, oyster sauce, black garlic sauce, chili garlic sauce, fish sauce, soy sauce and vinager and stir.

  6. Bring to a simmer and simmer for ~20 minutes.


Eggs

  1. Bring a pot of water to boil (make sure there is enough water to cover the eggs).

  2. When boiling, carefully lower the eggs into the water and cook for 7 minutes

  3. Place eggs in water with ice for 3 minutes.

  4. Remove from ice bath and gently peel (egg will be soft).

  5. (Optional) Place eggs inside a glass mixed with 1/4 cup of low sodium soy sauce, 1/4 cup rice vinegar and 3/4 cup water for 1 hour to make ramen marinated eggs


Ramen Noodles

  1. Follow package instructions :)


Plating

  1. In a bowl put 1 teaspoon of soy sauce, 1 teaspoon of black garlic sauce and 2 teaspoon of sesame oil

  2. Add broth

  3. Add ramen noodles

  4. Add top part of green onions

  5. Add pork belly (or your favorite protein)

  6. Add sesame seeds to taste
