When you hear lobster your mind might directly think expensive. Nonetheless, a lobster tail might sometimes go for around five dollars. When this happens, there's not many better ways to enjoy it than this fresh and tasty pasta dish. This pasta carries the sweetness of the cherries and caramelized shallots, the freshness of the lemon and of course the tastiness of the lobster.
Ingredients
Sauce
2 tablespoons Olive Oil
3-4 Shallots (finely sliced)
3 Garlic Cloves
1-2 teaspoons Chili Flakes
60g Cherry Tomatoes (sliced in half)
100 ml White Wine
100ml seafood stock (home made or available at any supermarket)
1 Lemon
1 sprig Basil (sliced)
Salt and Peper (to taste)
Lobster
1 Lobster Tail
1 tablespoon Butter
1 tablespoon Olive Oil
1/2 Lemon
Shrimp
8-10 Shrimp
1/2 Lemon
2 tablespoons Olive Oil
Pasta
225g Fresh Pasta (perfect with Tagliatelle)
Directions
Sauce
Slice shallots thinly, add salt and pepper to taste and add to medium/low heat pan with olive oil (we want enough oil to caramelize the shallots) (we want to start with low heat to avoid burning the shallots)
Once almost caramelized, finely grate the garlic into the pan and mix with shallots an cook for a couple minutes.
Deglace the pan with the white wine.
Turn up the heat and add the sliced cherry tomatoes, chili flakes, fish stock and the lemon (zest and juice).
Bring to a simmer and slightly reduce.
Once cherry tomatoes soften, turn off the heat.
Add the sliced basil and mix.
Shrimp
Set pan to medium/high heat.
Season pealed shrimp nicely with salt and pepper.
Add olive oil and a bit of the juice of the half lemon
Cook shrimp for 1 minute each side and zest the half lemon on top
Add shrimp to sauce
Lobster
Set pan to medium/high heat.
Season pealed lobster tail nicely with salt and pepper.
Add olive oil, butter and a bit of the juice of the half lemon
Cook lobster for 1-2 minutes each side and zest the half lemon on top
Cut tail into bite size pieces and add to sauce
Pasta
Add salted water to a pot and bring to a boil.
Add pasta and cook based on package directions.
Add pasta to sauce and mix.
Plate and finish off with some parmesan cheese.
