You don't really need much of a recipe to make this tasty traditional Mexican dish but here's my take on this amazing recipe. Tortillas, chicken, vegetables, guacamole and cheese, here comes a super tasty chicken quesadilla.
1 Chicken Breast (diced)
1 Flour Tortilla
1 cup Cheddar Cheese (or mexican cheese blend)
1/2 Onion (diced)
1/2 Green Pepper (diced)
1/3 cup Mushrooms (cut in quarters)
1/4 cup Guacamole
Cut chicken in dices and season generously with salt and pepper.
Place chicken into pan with a drizzle of olive oil over medium/high heat until chicken is crispy.
Set chicken aside.
Cut onion, pepper and mushroom in dices and season generously with salt and pepper.
Place diced onion, pepper and mushrooms into pan with a drizzle of olive oil over medium heat until soften.
Mix with chicken and set aside over super low heat to keep warm.
Set another large pan on medium/low heat with a drizzle of olive oil and place 1 tortilla
Place cheese in top of the tortilla and wait until it starts melting (make sure tortilla doesn't burn)
Add chicken and vegetable mix on top of the cheese for one half of the tortilla.
Add guacamole on top.
Fold the other half of the tortilla to close the quesadilla.
Place pan for 2-3 minutes under the broiler.
Cut and serve
